SIMON CROTETTES

Many years ago when our first two boys were still toddlers the oldest of the two should have been Art Linkletter's poster child for "Kids Say the Darndest Things". We never knew what he would say next and by the way, we still don't know what he will say next. We always went to church on Wednesday nights for mid-week services. The children all went to classes while the adults stayed in the auditorium for lessons. After the services were over we would all stand out in front of the building and "fellowship" for a long time. Our son's teacher said she asked the little ones what they had for supper that evening. Our son replied, "we had Simon Crotettes", and she just wanted to know what in the world that was. When I told her we had salmon croquettes we both realized that was his pronunciation of what he had for dinner. Our son was probably two or three years old at the time. So, far the past 58 years we have called Salmon Croquettes "Simon Crotettes".
I have a really simple recipe for Simon Crotettes and it comes in handy when I forget to take something out of the freezer to cook for supper. And yes, we do still call the evening meal supper at our house. So this was "what's for supper last night" along with one of my jar salads and a jar of green beans canned from my garden last year.
Recipe:
1 14.75 oz. can of salmon drained but not too dry
2 eggs
3/4 sleeve of soda crackers crumbled
chopped onion
chopped bell pepper
black pepper
just a little salt
dried dill seed (which I grow and dry every summer)
Mix all together, pat into patties and pan fry in iron skillet with about one inch of hot vegetable oil. Brown good on both sides. Makes 12 patties. Delicious with or without ketchup.

LILAC BEDROOM
Finishing with putting rooms back together after the big paint job of the fall that lasted through December. This is a bedroom in the bottom floor of the house. I call it the Lilac Room because of the lilac print quilt and other pieces of lilac décor in the room.
The room is not too big and therefore has only one window. That makes it easy to use what you have in the attic because you only have to have one of each item.
The dresser is the only piece of furniture left from our very first house and it has been painted several times. I guess that makes the furniture over 60 years old but it is still in good condition. The armoire is one bought several years ago and has been in storage several times but now has a place to call home. Still have so many boxes to go through.

Where has the New Year gone? Here it is February and I don't even know where January went. But I do know that I have already fallen short of a few New Year's Resolutions.
This picture is a February calendar picture from Maud Humphrey's collection of paintings of children. I have a whole year but the pictures are probably not from the same year. The February picture is of a Dutch child, or at least that is what the label on the back says. Some might call her from the Netherlands. I bought my collection from an antique dealer over twenty years ago. Each picture is in a different size frame and this makes the collage a little difficult to hang. I still love the pictures as much now as I did the day I bought them. Most of Humphrey's paintings were done in the late 1800s. They are water colors and the pastels go very nice in my home.
