LEMON POUND CAKE

 



 

This is an easy cake to do when you are in a hurry or just don't want to spend much time in the kitchen.

1 lemon cake mix                                                  1 stick butter softened

1 small instant lemon pudding                              2 to 3 cups confectioners sugar

4 egg                                                                      4 to 6 tablespoons lemon juice

1 cup water

1/3 cup vegetable oil

 

Really refreshing dessert for the middle of summer.  Would be super good with a big scoop of ice cream!
